Seasonal cooking and baking are one of our favorite ways to take advantage of the local offerings and celebrate the season. As we quickly approach the fall months, pumpkin is a popular fall squash that can be used in so many different ways.
One of our favorite ways to highlight this seasonal specialty is in pumpkin bars and cakes, perfect for any fall picnic, gathering, or just as a sweet treat.
Pumpkin Desserts
Pumpkin desserts are perfect for dessert lovers who don’t want anything too sweet. The pumpkin can be used for both flavor and texture in many recipes – but we really love highlighting that warm fall taste.
This month, we’re excited to share with you a family recipe you can try in your own home: Einkorn Pumpkin Bars. These bars celebrate the flavors of the season and can be tweaked in many ways to highlight what you love most. Throw in some nuts, swap out the icing, or add a scoop of your favorite ice cream over the top. The options are endless!

Einkorn Pumpkin Bars
2 c. Pumpkin purée
4 lg. eggs
1c. butter
1 c. coconut palm sugar
4 T. honey
1 tsp. vanilla
2 tsp. Cinnamon
1 tsp. baking powder*
1 tsp. baking soda*
1 tsp. salt
2 1/4 c. Einkorn flour
*Bob’s Red Mill is the kind we use. Other brands of soda and powder may require double the amount.
Mix ingredients in order.
Spread into greased 11×15 in. pan.
Bake at 350* 15-20 minutes OR 9×13 for 30-40 minutes.
Cool and spread with maple frosting.
Maple Frosting
Maple frosting
1/2 c. cream
8 oz. cream cheese
1/2 c maple syrup
Pinch of salt
Whip cream.
Add cream cheese, syrup and salt.
Whip till smooth.
Pour over bars when ready to serve.
